Who doesn't love a fast & easy dinner recipe? Who doesn't especially love one that you can whip up in fifteen minutes that your family will love?
If you're raising your hand, I have the dinner recipe for you.....Tuna Patties!
It's so funny to me that some of the things that my kiddos ask me to make for dinner are the very same favorites I had growing up as a child. I have great memories of my Mother making tuna patties at least once a week while I sat at the kitchen table doing my homework..... and boy did we love them!
Not only do they cost next to nothing to make, your kids might not even realize they are eating healthy tuna! Win -win for "Team Mom".
Tuna Patties
(makes 5 good size patties)

4 cans chunk light tuna in water (drained)
½ tsp onion powder
2 eggs
½ cup Italian style bread crumbs
Salt & pepper (to taste)
Cooking oil (enough to coat fry pan)
1. Drain the water from the tuna and set inside medium size bowl. Add all remaining ingredients except the cooking oil.
2. Mix together all ingredients. I usually use my hands to make sure everything is mixed really well and the bread crumbs are incorporated throughout. Form into patties.
3. Coat medium sized fry pan with cooking oil over medium heat.
4. Add patties to the fry pan and cook about eight minutes per side until lightly browned.
